Our Head Chef

Growing up in a farming family, with a home on the fields lying in the back of Chứa Chan mountain, his childhood shaped by the rhythms of nature, days of wandering around the family’s pepper and tobacco farm, Chef Hiep knows his heart was always close to the quiet beauty of his surroundings, the Vietnamese essence, as it was the nearest way to bring him back to his family.


Started to choose cooking as his strongest love language at a young age, he worked hard to hone his craft and grow as a chef. With roots in Hue, a land rich in cultural and culinary heritage, Chef Hiep draws deep inspiration from the traditional dishes of Central Vietnam. His creations reflect not only his skill and passion but also the soulful taste of his homeland, reimagined with care and respect.


Upstairs Tasting Room is a dream this hardworking man has always dreamed of. Through thoughtful gestures and unwavering dedication, he inspires his team - not with words, but with care, precision, and strength of focus. Restaurant Manager & Head Sommelier

Graduated from Hanoi University of Education with a major in French—a path initially chosen by her family but My Tran discovered her true passion for the F&B industry during her part-time jobs at restaurants and hotels as a student. It was during her time immersed in the professional environment of JW Marriott Hanoi that she found profound motivation and inspiration to fully pursue a career in hospitality. This was also where she first crossed paths with mentors and peers who later embarked on their journeys as sommeliers.


With each passing day, My Tran’s fascination with the world of gastronomy and beverages grew, particularly her love for wine. She found immense joy in uncovering the intricate layers of aromas with every tasting, which ultimately fueled her decision to delve deeper into the craft. Her ambition is to contribute to the global wine industry, representing a new generation of Vietnamese sommeliers who are dedicated, curious, and committed to growth. Beyond that, she has a keen interest in championing small producers and boutique wineries, hidden gems with limited production and exceptional quality deserving of greater recognition.
